Italian Crumb Broccoli

Ingredients 
  • 1 large bunch fresh broccoli
  • 1 small onion chopped
  • 2 - 3 good size fresh garlic minced (more if you are a garlic lover)
  • 1/2 cup olive oil
  • 1 cup Italian bread crumbs
  • 3/4 cup grated Parmesan cheese
  • 1 egg slightly beaten
  • salt and pepper to taste
Method 

After cutting broccoli into appropriate sized spears for cooking, cook in slightly salted water until tender and the consistency for "mashing" like mashed potatoes. Drain and set aside. In large skillet, heat the olive oil and sauté onion and garlic, cooking until garlic has turned brown. Then add the mashed broccoli and mix well. Heat through. Then add the breadcrumbs and parmesan cheese, mixing well. Add salt and pepper as desired. Remove skillet from heat, then add the slightly beaten egg and distribute it, mixing really well. Put broccoli mixture in a casserole dish, covered, and keep warm in 350°F oven while finish the preparations for the rest of your meal. This broccoli is rather different and very tasty.
