Kimmie's Fiesta Bake

Ingredients 
  • 1 pound ground beef
  • 1 jar mild Salsa (16 or 20 oz)
  • 1 can ripe olives (small can)
  • 1 can corn
  • 1 package Taco mix
  • 1 box Jiffy cornbread mix
  • 1 package shredded cheddar cheese (16 or 20 oz)
  • 1 (40z) can green chilies
  • sour cream
  • diced banana peppers (optional)
Method 

Brown the beef, draining the fat, the add the following; taco mix, salsa, olives, corn, 1/4 cheddar cheese. Mix well and allow to simmer for 10 minutes. While meat is simmering, prepare the cornbread, adding chilies and another 1/4 of the cheese. In a 9 by 11 1/2 inch pan, pour meat mixture in pan; spread left over cheese over top of meat mixture. Now add cornbread mixture on top evenly. Bake in oven at 350°F for about 20 minutes or until cornbread is done. Top with sour cream when serving.
