Valentine's Day Cake

Ingredients

  • 1/2 cup shortening 
  • 1 1/2 cups sugar 
  • 2 eggs 
  • 2 cups flour 
  • 1 tablespoon cocoa 
  • 1 teaspoon salt 
  • 1 teaspoon baking soda 
  • 1 tablespoon vinegar 
Method 

In a mixing bowl cream together shortening and sugar; add the eggs and beat well. 
Sift together flour, cocoa and salt. Fold in 1 teaspoon baking soda dissolved in 1 tablespoon vinegar, quickly. Using two, 9 inch layer pans that have been greased and floured. (use heart shaped pans if you have them) Bake at 350° F for 30 to 35 minutes. 

Filling and Frosting 

  • 1 cup milk 
  • 1/4 cup flour 
  • dash salt 
  • 1/2 cup shortening 
  • 1/2 cup margarine 
  • 1 cup white sugar 
  • 2 teaspoons vanilla 
Method 

Cook milk, flour and salt on low flame to pudding stage. In a mixing bowl cream together the shortening, margarine, sugar and vanilla; add to pudding and beat well. Spread between layers and on top and sides. 
Sprinkle with coconut.
