Lemon
Squares for Valentines
Ingredients
Crust
- 1/2 cup butter
- 1/4 cup confectioners sugar
- 1 cup flour
- pinch salt
Filling
- 2 eggs
- 1 cup sugar
- 2 tablespoons flour
- 3 tablespoons lemon juice
- 1 teaspoon lemon rind; grated
- 1/4 teaspoon baking powder
Topping
Method
Crust
Cream butter and confectioners sugar. Add flour and salt. Press into an
8 by 8 inch pan. Bake crust at 350°F for about 20 minutes.
Filling
Combine the eggs, sugar, flour, lemon juice, lemon rind and baking powder.
Pour over hot crust. Bake 20 to 25 minutes. Cool in pan. Sprinkle with
confectioners sugar topping. Cut into squares and store in tin box
between layers of wax paper.
