Potato Kisses

Ingredients

  • 2/3 cup mashed hot potatoes
  • 2 teaspoons butter melted
  • 1 pound confectioners sugar sifted
  • 1 1/2 tablespoons cocoa or 1 1/2 unsweetened chocolate squares
  • 1 teaspoon vanilla extract
  • dash salt
  • 1/2 pound coconut

Method 

Remove all lumps from mashed potatoes; add butter and beat until smooth. Add sugar and blend well. Add the cocoa or cooled melted chocolate, vanilla, salt and coconut. Drop by teaspoonfuls onto waxed paper. Keep candy uniform in shape and size. Place in refrigerator to harden. Keep in a tightly covered container.

Yield: 1 1/2 pounds
