Chocolate Mint Ice Ingredients
Method Beat the eggs in a bowl. Place milk and sugar in a pan and heat gently to dissolve sugar, remove from heat as soon as you see small bubbles appear. Pour a few tablespoons of the hot milk in to the eggs and mix well, then add that back to the milk. Stir gently and thicken on low hat, until mixture bubbles gently. It will have the appearance of thick custard. Remove from heat and let cool. Whip the cream with a fork until it is fluffy. When the mixture has cooled fold in the cream, by pouring the cream over the milk egg mixture, and bringing the mixture from the bottom, in a circular motion. Pour half the mixture in a flat tray. Add peppermint essence and mix well. If using food coloring mix it in now. To the remaining mixture, add cocoa and mix well. Now pour the chocolate mixture over the peppermint one. Draw a knife over the mixture to make swirls. |
