Cherry Tarts

Ingredients

  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 3 tablespoons orange juice
  • 1 tablespoon lemon juice
  • 1 cup unsweetened cherry juice
  • 2 tablespoons butter
  • 1 teaspoon grated orange rind
  • 4 cups red tart unsweetened cherries
  • 9 tart shells

Method 

Mix sugar, cornstarch, salt and fruit juices. Cook over direct heat for 5 minutes or until thickened and clear. Remove from heat; add butter, orange rind and cherries. Cool. Put into tart shells. Serve plain or with ice cream or whipped cream.
