Pumpkin Pie Bites

Ingredients
Crusts

  • 1 1/2 cups flour plus 3 tablespoons

  • 1/2 teaspoon salt

  • 1 1/2 teaspoons sugar

  • 1/2 cup vegetable oil

  • 3 tablespoons milk

Filling

  • 2 eggs

  • 3/4 cup sugar

  • 1 teaspoon cinnamon

  • 1/4 teaspoon cloves

  • 16 ounces pumpkin

  • 1/2 teaspoon salt

  • 1/2 teaspoon ginger

  • 12 ounces evaporated milk

Method

Mix together pastry ingredients until mixture forms a ball. Make little balls of the pastry and press into mini muffin cups. Be sure to make the sides high enough to hold the pumpkin mixture, or they will stick when you try to remove them from the pan. Make the pumpkin filling, spoon about 2 tablespoons filling into each cup. Bake at 425°F for 15 minutes, reduce heat to 350°F and bake an additional 15 minutes.

Yield: 20 bites
