Gingerbread Pancake Mix

Ingredients

  • 1 cup cake flour
  • 1 cup all purpose flour
  • 2/3 cup mini semi sweet chocolate chops
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 2 teaspoons ground ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground cloves

Method

Combine all ingredients in large bowl. Whisk together 1 3/4 cups room temperature buttermilk, 2 room temperature eggs, 6 tablespoons melted butter, 1/4 cup molasses and 2 room temperature egg yolks; stir into flour mixture until just combined. coat nonstick skillet with cooking spray; set over medium heat. Pour batter, in batches, 1/4 cup at a time into skillet.
Cook pancakes, turning once until golden and cooked through, about 2 minutes per side.

Yield: 20 pancakes
