Orange Carrot Salad

Ingredients

  • 1 (3 oz) package lemon jello powder

  • 1 cup boiling water

  • 1 cup cold water

  • 1/4 teaspoon salt

  • 2 tablespoons vinegar

  • 4-6 medium carrots

  • 1/2 cup finely cut celery (optional

  • 1/8 teaspoon finely grated orange peel

Method

Dissolve lemon jello powder in boiling water, stir. Add cold water, salt and vinegar. Grate carrots, finely and add with remaining ingredients. Rinse a 1 quart jelly mold with water and add jello mixture. Chill until firm. Unmold on crisp lettuce. Serve with a favorite dressing or mayonnaise, or eat as is.

Yield: 4-6 servings
