Marinated Carrot Salad

Ingredients 

  • 2 pounds raw carrots
  • 1 medium onion sliced
  • 1 large green pepper or substitute mushrooms or cauliflower or broccoli
  • 1 can tomato soup
  • 1/2 cup oil
  • 1 cup sugar
  • 3/4 cup vinegar
  • 1 tablespoon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt

Method     

Wash and peel and slice carrots. Cook until tender; drain. Combine ret of ingredients in a bowl. Stir in carrots and onions and vegetables. Cover tightly. Place in refrigerator over night. If you use mushrooms don't add them until just before serving.
