Gingerale Fruit Salad

Ingredients

  • 4 teaspoons unflavored gelatin

  • 1/3 cu cold juice (your favorite)

  • 1/2 cup boiling orange juice

  • 1/4 cup lemon juice

  • 1/4 cup sugar

  • 1 cup gingerale

  • 1 cup grapes

  • 2 oranges

  • 1 apple

  • 1 banana

  • 1/4 cup chopped nuts (optional)

Method

Soak gelatin in cold juice for five minutes. Then dissolve in boiling juice. Add lemon juice, sugar and gingerale; chill. Cut grapes in half and remove seeds (I buy seedless grapes) Peel and section oranges, removing membranes. Peel and chop apple. Peel and slice banana. Mix fruit to prevent apple and banana from turning brown. When gelatin begins to thicken, add fruit and nuts. Pour into 1 1/2 quart mold or 10 1/2 cup molds to set. Serve on crisp lettuce leaves with fruit or dressing. If you would like you can add a few drops of food coloring to gelatin mixture while still warm and mix well.

A nice Fruit Dressing

Citrus Cream Dressing

  • 2 eggs

  • 1/4 cup sugar

  • 1/4 cup lemon juice

  • 2 tablespoons orange juice

  • 1/2 teaspoon dry mustard

  • 1/4 teaspoon salt

  • few grains cayenne

  • 1 tablespoon butter or margarine

  • 1/2 cup heavy cream, whipped

  • pecans coarsely chopped

  • candied orange peel, coarsely chopped

Beat together in saucepan eggs, sugar, fruit juices, spices and butter. Cook over low heat, stirring, and bring just to boiling point; then remove from stove. When cool, fold in whipped cream. Turn into serving bowl and garnish with pecans and candied orange peel.
