Blueberry Jam 1



Ingredients:
- 1 teaspoon butter ( or margarine)
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla ( extract)
- 2 tablespoon juice (lemon )
- 3/4 cup sugar
- 1/2 ounce water (unflavored gelatin; 2 envelopes 1 1/2 cups cold )
- 2 pint blueberries ((about 4 1/2 cups mashed) )
Directions:
In a large saucepan, combine the gelatin and water and let stand for one minute. Cook the gelatin and water over low heat about 5 minutes, stirring until dissolved. Stir in blueberries, sugar, lemon juice, butter and cinnamon. Bring to a boil, over medium heat and boil for 10 minutes stirring constantly. Remove from the heat and stir in the vanilla. Spoon in to prepared jars. Yield: 5 ( 8 oz) jars
