Ham and Potato Salad



Ingredients:
- 1 pound potatoes (red (about 3 cups); cut into 1/2 in wedges)
- 1 vegetable (pk frozen mixed (16 oz))
- 1/3 cup mayonnaise ( or salad dressing)
- 1/3 cup sour cream
- 1/2 cup green onion ( sliced)
- 1 teaspoon pepper
- 1/2 teaspoon salt
- 3 cup ham (cooked (about 1 lb); chopped)
Directions:
1. Cook potatoes, covered in boiling water to cover 10 minutes or until tender (don't overcook). Drain and set aside. 2. Cook frozen mixed vegetables according to package directions; drain and set aside. 3. Combine mayonnaise and next 4 ingredients in a large bowl. Gently stir in potatoes, vegetables and ham.
