Aukong Applesauce Cake



Ingredients:
- 1/2 cup shortening ( or oil 2 cups sugar)
- 1 egg
- 2 cup apples (auce)
- 2 1/2 cup flour
- 1/2 teaspoon allspice
- 1/2 teaspoon clove (s)
- 1 teaspoon salt
- 2 cup raisin (s)
- 4 teaspoon baking soda
- 1 cup water (boiling )
- 1 cup nuts (chopped pecans/wal)
- 1 teaspoon cinnamon
Directions:
Preheat oven to 350F. Using electric mixer, mix first four ingredients in large bowl. Sift together flour, cinnamon, allspice, cloves and salt. Gradually add flour to the applesauce mixture until well mixed. To one cup boiling water add 4 teaspoons baking soda and 2 cups raisins. Turn raisins frequently and soak until raisins plump up. Gradually add raisins and liquid to the above cake mixture, add nuts at this point. Spray 13 x 9 inch cake pan or bundt pan and pour in cake ingredients. Bake in oven at 350 F for one hour or until cake springs back when touched. *Note* AUKONG is Eskimo for mother.
