Banana Spit Pie

Ingredients

  • 1 1/4 cups sugar 
  • 1/3 cup cornstarch 
  • 1/3 cup Hershey's cocoa 
  • 1/4 teaspoon salt 
  • 2 1/2 cups milk 
  • 2 egg yolks, slightly beaten 
  • 3 tablespoons butter or margarine 
  • 1 teaspoon vanilla extract 
  • 2 medium bananas, sliced 
  • Crumb Nut Crust 
  • whipped topping 
  • chopped peanuts 
  • additional banana slices 
  • maraschino cherries 

Method

In medium saucepan, stir together sugar, cornstarch, cocoa and salt. Stir together milk and egg yolks; gradually stir into sugar mixture. Cook over medium heat, stirring constantly, until mixture thickens and come to a boil. Reduce heat to low; boil, stirring constantly, 3 minutes. Remove from heat; stir in butter and vanilla. Press plastic wrap directly onto filling; cool about 20 minutes. Arrange banana slices over bottom of Crumb Nut Crust. Pour filling over bananas; press plastic wrap onto filling. Refrigerate 3 to 4 hours. Remove plastic wrap; top pie with whipped topping. Garnish with chopped peanuts, banana slice and maraschino cherries. Refrigerate leftover pie. 

Yield: 8 servings 

Crumb Nut Crust

  • 1 1/4 cups graham cracker crumbs

  • 1/4 cup finely chopped peanuts

  • 1/3 cup butter or margarine melted

Method

In medium bowl, stir together graham cracker crumbs, peanuts and butter. Press mixture on bottom and up sides of 9 inch pie plate. Bake 8 to 10 minutes in a 350°F preheated oven.
