Almond
Meringue Tartlets
Ingredients
- 1
pastry recipe or 18 frozen tart crusts
- jam
or jelly
- 1/4
cup ground almonds
- 1/3
cup powdered sugar
- 1/4
teaspoon almond flavoring
- 1
egg
Method
Prepare pastry; roll 1/8 inch thick and cut into 4-inch
rounds. Press into medium size tart pans. Or - Defrost frozen
tart shells, and prick with fork. Place
a 1/2-teaspoon jam or jelly in each tart shell and bake in 450 F oven
until shell are half-baked -- about 5 minutes.
Remove from
oven. Combine ground almonds and powdered sugar. Add almond
flavoring to egg and beat well. Work beaten egg into sugar mixture. Place
a tablespoon of filling into each tart shell. Bake at 350°F 7 to
10 minutes or until delicately browned.
Note: Shredded coconut may be
substituted for ground almonds.
Yield
1 1/2 dozen tarts
