Apple Crumb Pie for Two

Ingredients 

  • 1/2 cup plus  2 tablespoons all purpose flour

  • 1/4 teaspoon lemon rind

  • 3 tablespoons shortening, chilled

  • 1 tablespoon iced water

  • 3 tablespoons sugar

  • 1/2 teaspoon cinnamon

  • 2 cups apples, peeled, thinly sliced

  • 1/8 teaspoon ground nutmeg

  • dash ground ginger

  • 1 tablespoon margarine

Method

Preheat oven to 375°F. Blend together 1/2 cup flour, lemon rind and shortening. Add water. Roll out in 27-inch circles, fit loosely in 4 1/2 inch pie pans. In bowl stir together 1-tablespoon sugar, brown sugar and cinnamon. Toss apples with sugar mixture. Divide between two unbaked pie shells. In another bowl combine 2 tablespoons sugar, 2 tablespoons flour, nutmeg and ginger. Cut in margarine until crumbly, sprinkle over pie filling. (Optional: add shredded coconut to topping.) Cover edges with foil. Bake for 20 minutes, remove foil, and bake another 25 minutes, until topping is golden.
