 Deep Dish Cherry Pie 

Ingredients

  • 1 cup sugar

  • 1 teaspoon lime juice

  • 4 cups fresh or frozen tart pitted cherries

  • 1/4 cup all purpose flour

  • 1/2 teaspoon grated lime rind

  • 1 pie crust

Method

Preheat oven to 375ºF. In large bowl stir together sugar, flour, limejuice and rind. Add cherries; let this stand for 15 minutes. If cherries are frozen, let stand until partially thawed, stirring occasionally. Pour the mixture into a 1-½ quart casserole dish. Top with pastry crust trimmed to 1 inch over the edge of dish. Fold under and crimp the edge of pastry, cut slits in top and brush lightly with a bit of milk and a bit of granulated sugar. Bake for 50 to 55 minutes. Cool on wire rack for one hour before serving.
