Butterscotch Raisin Pie

Ingredients

  • 2 cups raisins

  • 1 package butterscotch pudding powder

  • 1/2 cup water

  • 1/8 teaspoon cinnamon

  • 2 tablespoons sour cream or plain yogurt

  • 2 cups water

  • 1/8 teaspoon cloves

  • 1/4 teaspoon orange rind

Method

Rinse raisins; cover with water and microwave 2 to 3 minutes (or simmer on stove) until soft. Thicken with butterscotch powder dissolved in the ½ cup water. Add spices, rind and sour cream. Cool; pour into pie shell and bake at 375ºF for 35 – 40 minutes.
