Cheese Bites

Method
Heat oven to
425°F. Prepare filling: mash blue cheese; add cream cheese, butter,
egg, onion and seasoning. Beat well until fairly smooth. Cover and
chill.
Pastry: Season flour and sift into a bowl. toss in shortening, add water
and mix lightly to form a soft dough. Roll out pastry on a lightly
floured surface to an oblong 12 by 8 inch. Spread filling over half of
pastry. Fold other half over, pressing edges together to seal. Mark into
1 inch squares. Transfer bites to baking tray and cook for 12 to 15
minutes until golden brown. If you want to make ahead freeze uncooked
bites in a single layer. Pack into bags when frozen. Cook from frozen,
adding 5 minutes to time.
