cups butter, softened

mixed spice

cup Australian Mixed Fruit

marzipan
-
apricot
jam
Method
Cream
together butter and sugar until light and fluffy.
Add
eggs one at a time, beating well after each addition.
Sift
together flour, baking powder and mixed spice.
Fold
into cake mixture alternately with the milk.
Stir
in Australian Mixed Fruit.
Place
2/3 of the mixture into a greased and lined 8 by 8 inch cake pan.
Roll
out half the marzipan to fit the pan.
Place
marzipan over cake batter and press down firmly.
Spoon
remaining cake batter on top of marzipan.
Bake
in a moderately slow oven (325 F) for 30 minutes.
Reduce
temperature to slow (300 F) and bake for a further 2 - 2 1/4
hours
or until cooked when tested.
When
cool, remove from pan and brush top with warmed, sieved apricot jam. Roll
out remaining marzipan and place on top.
Grill
carefully until lightly brown. Decorate as desired.
Note:
It is important to use good quality marzipan otherwise the cake will cook
with a 'wet' center.
