Lemon Love Notes

 

Ingredients 
Crust

  • 1/2 cup butter
  • 1/4 cup powdered sugar
  • 1 cup flour
  • pinch salt

Filling

  • 2 eggs
  • 1 cup sugar
  • 2 tablespoons flour
  • 3 tablespoons lemon juice
  • 1 teaspoon lemon rind; grated
  • 1/4 teaspoon baking powder

Topping

  • powdered sugar

Method 

Preheat oven to 350°F. Cream butter and powdered sugar, add flour and salt. Press into 8 by 8 inch pan and bake for about 20 minutes.
Combine the eggs, sugar, flour, lemon juice, lemon rind and baking powder. pour over hot crust. Bake for 20 to 25 minutes. Cool in pan. Sprinkle with powdered sugar topping and cut into squares. Store in tin box between layers of wax paper until Mother's Day.
