Brown Bread

Ingredients

  • 1 1/4 cup whole wheat flour
  • 1 1/4 cup corn meal
  • 1 1/4 cup rye flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 1/2 cups buttermilk
  • 1 cup dark molasses
  • 1 cup raisins

Method 

Stir together the dry ingredients in a large mixing bowl. Add the buttermilk, molasses and raisins. Mix by hand until well blended. Divide the mixture into two pars. Place each in a waxed paper lined baking dish that are 10 by 6 by 1 3/4 inches. Cover each with a plastic wrap. Microwave one loaf at a time on medium for 22 to 24 minutes. Turn dish a half turn halfway through cooking. Remove plastic wrap. Place on a solid surface for about 10 minutes before removing from baking dish.

Yield: 2 loaves
