Homemade Jams and Jellies

Cantaloupe  Jam 

Ingredients
  • 4 cups cantaloupe peeled and diced
  • 3 oranges peeled and diced
  • 1/4 cup lemon juice
  • 4 cups sugar
  • 1 teaspoon lemon rind
  • 1 teaspoon orange rind
  • 1/2 teaspoon salt
  • 3 cups bananas

Method 

Combine cantaloupe, oranges, and 1/4 cup lemon juice in heavy saucepan. Bring to a boil and simmer for 15 minutes. Add sugar, lemon rind, orange rind, and salt. Continue simmering for 30 minutes. Add 3 cups sliced bananas and continue simmering for an additional 15 minutes. Pour into jelly jars and cover with paraffin. Can be frozen.

Yield 8 (6 ounce) jars.
