Homemade Jams and Jellies

Blueberry Jam 1

Ingredients
  • 1/2 ounce unflavored gelatin; 2 envelopes
  • 1 1/2 cups cold water
  • 2 pints (about 4 1/2 cups mashed) blueberries
  • 3/4 cup sugar
  • 2 tablespoons lemon juice
  • 1 teaspoon butter or margarine
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract

Method 

In a large saucepan, combine the gelatin and water and let stand for one minute. Cook the gelatin and water over low heat about 5 minutes, stirring until dissolved. Stir in blueberries, sugar, lemon juice, butter and cinnamon. Bring to a boil, over medium heat and boil for 10 minutes stirring constantly. Remove from the heat and stir in the vanilla. Spoon in to prepared jars.

Yield: 5 ( 8 oz) jars
