Pumpkin Pie Muffins

Ingredients

  • 1 cup whole wheat flour

  • 1/2 cup all purpose flour

  • 1/3 cup packed brown sugar

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1 teaspoon cinnamon

  • 1/4 teaspoon ginger

  • 1/4 teaspoon nutmeg

  • 1/4 cup raisins

  • 3/4 cup canned solid pack pumpkin

  • 1/4 cup vegetable oil

  • 1/4 cup nonfat plain yogurt

  • 1 egg

Method

Line muffin tin with paper or foil cups. Preheat oven to 375°F. In a large bowl, combine first 9 ingredients. In a medium bowl, combine all the wet ingredients until well blended. Add all at once to the dry ingredients; stir only until moistened. Batter will be slightly lumpy. Spoon the batter into the muffing cups and bake 20 to 25 minutes until golden and springy tot he touch. Let cool completely on rack.
These muffins freeze very well and you can reheat them in the microwave for 30 seconds.
