Halloween Recipes for the Young and Old alike!

Halloween Cookie Pizza

Ingredients

  • 3/4 cup light brown sugar
  • 1/2 cup butter flavored shortening
  • 1 egg
  • 1 tablespoon water
  • 1 teaspoon vanilla
  • 1 1/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup peanut butter chips (my granddaughter is allergic to peanuts and I used butterscotch chips instead and it worked fine)
  • 1 cup miniature marshmallows
  • 1/2 cup semi sweet chocolate chips
  • 1/2 cup pecans chopped (again I used walnuts here, because of my granddaughters allergy, so the nut that you like best)
  • 1/4 cup semi sweet chocolate chips
  • 1 1/2 tablespoons butter flavored shortening
  • 1/2 cup powdered sugar
  • 1 tablespoon water
  • 3 drops yellow food coloring
  • 2 drops red food coloring

Method

Preheat oven to 350°F. Lightly grease a 12 inch round pizza pan. In a large bowl, beat sugar and shortening until creamy. add egg, water and vanilla and beat well. In a separate bowl, stir together flour, baking soda and salt; add to sugar mixture, beating on low speed until well blended. Stir in peanut butter chips. spread batter in prepared pan to within one half inch of edge. Bake 11 to 13 minutes or until set. Remove from oven. Sprinkle marshmallows, chocolate chips and pecans over the top. Return to oven and bake 5-7 minutes or until marshmallows are lightly browned. Cool completely. Melt chocolate and shortening and drizzle over the top. Blend  powdered sugar, water, and enough food coloring to turn it orange, and drizzle over chocolate. Let stand one hour until set. Cut into wedges.

Yield: 16-20 servings
