Lemon Butter Frosting

Ingredients

  • 1 teaspoon grated lemon rind
  • 6 tablespoons butter
  • 3 cup sifted confectioners sugar
  • 1/4 cup lemon juice
  • 1 teaspoon salt


Method 

Add lemon rind to butter, cream well. Add part of the sugar gradually, blending after each addition. Add remaining sugar, alternately with lemon juice, until spreading consistency. Beat thoroughly after each addition. Add salt.

Yield: enough frosting to cover tops and sides of two 9 inch layer or two 8 inch layer cakes.
