Ricotta Frosting

• 1 package light ricotta cheese
• 4 tablespoons frozen orange juice concentrate
• 1/4 teaspoon orange extract
• 4 tablespoons honey
• 1 tablespoon vanilla

Method

In food processor, whip ricotta until smooth and thick. Add in orange juice and extract, honey and vanilla processing while adding liquids, until mixture is spreading consistency. This is good for angel food cake.
