Creamy Cherry Frosting

• 5 1/2 cups sifted confectioners sugar
• 3/4 cup butter or margarine; softened
• 6 tablespoons maraschino cherry juice
• 2 drops red food coloring
• 1/2 teaspoon vanilla
• 1/4 cup chopped red maraschino cherries

Method

Combine the sifted confectioners sugar, butter, juice, food coloring and vanilla in a bowl. Beat with an electric mixer at medium speed until smooth and creamy. Add 1 more tablespoon cherry juice, if necessary, to make the frosting into a spreadable consistency.
