Cream Cheese Frosting

Ingredients

  • 2 (3 ounce) packages cream cheese, softened 
  • 1/2 cup butter; softened 
  • 2 teaspoons vanilla 
  • 4 3/4 cups powdered sugar; sifted 
Method 

Beat together cream cheese, butter, and vanilla until light and fluffy.  Gradually add 2 cups powdered sugar, beating well.  Add another 2 1/2 to 2 3/4 cups of powdered sugar to reach spreading consistency.  Cover and store cake in refrigerator. 

Yield: This frost tops and sides of two 8- or 9 inch layers.
