Fluffy White Icing

Ingredients

  • 1 1/2 cups brown or white sugar 
  • 1/3 cup water 
  • 1/8 teaspoon cream of tartar 
  • 2 egg whites (unbeaten) 
Method 

Place all ingredients in top of 2 quart double boiler. Cook over boiling water beating constantly with beater until icing stands  up in peaks, about seven minutes. Remove from heat and add any flavoring. Beat thoroughly to spreading consistency and ice cake. 

YIELD: 2 1/2 to 3 cups
