Sea Foam Icing

Ingredients

  • 1 cup brown sugar 
  • 1/4 cup water 
  • 2 beaten egg whites 
  • 1 cup chopped walnuts (optional) 
Method 

Combine brown sugar and water in 1 quart saucepan. Boil till syrup reaches 225°F (spins a thread when dropped from spoon). Pour syrup onto beaten egg whites and beat till the stiff peak stage. 
Add chopped nuts and spread on cake. 

YIELD: 3 cups
