SEVEN MINUTE FROSTING

Ingredients

  • 1 cup granulated sugar 
  • 1/8 teaspoon cream of tartar 
  • few grains salt 
  • 1 egg white, unbeaten 
  • 1/3 cup boiling water 
  • 1/2 teaspoon vanilla 
Method 

Mix all ingredients together (except vanilla) in top of double boiler; stir to dissolve sugar. Set pan over boiling water and beat with rotary or electric beater until stiff enough to stand in peaks. Remove from heat; add vanilla and continue beating until stiff enough to spread. Use immediately. 

YIELD: 
Enough for large layer cake. 

NOTE 
It is preferable to use an enamel or Pyrex double boiler. The beating will take longer if a rotary hand beater is used instead of an electric beater
