Boiled Frosting

Ingredients 

  • 2 cups granulated sugar 
  • 1/3 cup corn syrup 
  • 1/3 cup water 
  • 2 egg whites 
  • 1 teaspoon vanilla 
Method 

Combine sugar, corn syrup and water in top of double boiler. Cook over boiling water until syrup will spin a long thread when dropped from a spoon or until candy thermometer reads 238°F. Remove from heat. Meanwhile, having ready stiffly beaten egg whites. Add the beaten egg whites and vanilla and beat until mixture is almost cold, becomes creamy and will hold its shape when spread on cake. Grated lemon or orange rind or almond 
flavoring may be used instead of vanilla. Chopped nuts or shredded coconut may be folded in at end. Use immediately. 

HONEY BOILED FROSTING 

Make as for Boiled Frosting but substitute honey for corn syrup. Omit vanilla.


COFFEE BOILED FROSTING 

Make as for Boiled Frosting but substitute cold strong coffee for water. Omit vanilla. 

YIELD: 
Enough for large layer cake
