My
Favorite Cheesecake
Ingredients
- 1/4 cup
butter
- 1/4 cup
sugar
- 2 8 oz
packages of cream cheese, softened
- 3 eggs
- 1/4
teaspoon salt
- 1/4 cup
lemon juice
- 1-8
ounce container of sour cream
Method
Preheat
the oven to 300°F. In a saucepan, melt the butter and stir in the
crumbs and sugar. Pat firmly on the bottom of a buttered 9 inch
spring form pan.
In a large mixer bowl beat the
cheese until fluffy.
Beat in the sweetened
condensed milk, eggs, and salt until smooth. Stir in the lemon
juice. Pour into the prepared pan. Bake 50 to 55 minutes or
until the cake springs back when lightly touched about 1 inch
from the center. Turn the oven off. Spread the sour cream onto
the cheesecake. To minimize cracking, return the cheesecake to the
oven for 1 hour. Chill.
Remove the side of the pan. Garnish
as desired.
