Pasta Dough

Ingredients
  • 1-1/2 cups Canadian all purpose/US bread flour 
  • 1 cups Seminole flour 
  • 1/8 teaspoon salt 
  • 3 eggs, large 
  • 1 tablespoons olive oil 
  • 1 tablespoon  water (as needed) 
Method 

Place flours and salt in large bowl. Mix well and form a well in the center. Add the rest of the ingredients.  Mix well. If the dough is too dry, slowly add a few drops of water and mix. Knead well. These steps can be done in a heavy duty food mixer. Allow the dough to rest 30 minutes. Shape the dough.  Allow dough to dry for a 10 minutes. Cook. This dough can be made ahead. After shaping, you can dry the dough overnight, or allow to dry for 10 minutes and then freeze.
