Peanut Butter Cookies (Reduced Fat)

Ingredients

 

  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • ¾ cup reduced fat peanut butter
  • ¼ cup butter or margarine, at room temperature
  • ¾ cup packed dark brown sugar
  • 1 egg
  • ¼ cup molasses
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar

Method

Combine flour and baking soda. In bowl with mixer at medium speed beat peanut butter, butter and brown sugar until combined. Beat in egg, molasses and vanilla until just combined. Gradually beat in reserved flour mixture until just combined. Using 1 rounded tablespoon per cookie, roll dough into balls; place 2 inches apart on ungreased baking sheets. With fork press tops of cookies to flatten and make cross hatch pattern. Bake 10 minutes or until edges are set, but centers are still soft. Sprinkle with granulated sugar; cool on rack 1 minutes. Remove from pan; cool completely on rack.

Yields: 26 cookies

Per cookie: 145 calories; 3 grams protein; 5 grams fat, 13 mg. Chol.; 23 grams carbs.; 131 mg. Sodium; 1 gram fiber; 12 grams sugar If using the point system this is worth 3 points per serving.
