Baked Fruit Compote 1

Ingredients

  • 2 cups canned fruit: such as peaches, apricots, plums, cherries etc. 
  • 2 tablespoons brown sugar 
  • grate rind and obtain juice of 1/2 lemon 
  • 1/2 cup macaroon or other cookie crumbs 
Method 

Preheat oven to 350°F. Drain the canned fruit, reserving liquid. Arrange layers of fruit in a deep baking dish, sprinkling each layer with brown sugar, lemon rind and lemon juice. Then pour the reserved juice from the cans on top, sprinkle on the crumbs and bake 35 minutes. 

Serve warm or cold. 
Yield: 4 to 6 servings
