Baked Custard

Ingredients

  • 4 eggs 
  • 1/2 cup sugar 
  • 1/4 teaspoon salt 
  • 1/4 teaspoon vanilla 
  • 2 cups scalded milk 
  • 1/2 teaspoon nutmeg 
Method 

Beat eggs slightly with a fork. Stir in sugar, salt and vanilla. Add a little of the hot milk to the egg mixture and stir; add remaining milk and mix well. Strain. Pour into 1 quart mold or 8 individual molds; sprinkle top with nutmeg. Set mold or molds in a pan containing about one inch of hot water. 
Bake at 350°F 50 - 60 minutes or until firm. 
To test: run a sharp knife through center, if knife comes out clean, then custard is done. Serve as is, or unmold to serving dishes. 

Yield: 8 servings
