Apricot  Whip

Ingredients

  • 1/2 cup dried apricots 
  • 1 egg white 
  • 1 1/2 tablespoons sugar 
Method 

Barely cover dried apricots with cold water in 1 quart saucepan. Boil until soft; put through sieve. 
Beat egg white with sugar to stiff peaks. 
Fold into sieved apricots. Chill and serve with custard or any pudding
