Tapioca Pudding

Ingredient

  • 1/4 cup pearl tapioca 
  • cold water 
  • 2 1/4 cup milk 
  • 2 eggs, slightly beaten 
  • 1/3 cup sugar 
  • dash salt 
  • 1/2 teaspoon vanilla 
Method 

Soak tapioca in cold water to cover for several hours. Drain. Add milk; cook in double boiler until clear, about 30 minutes. Add sugar, salt, vanilla and cooked tapioca to slightly beaten eggs. Pour into oiled 1 1/2 quart casserole. Place in pan of hot water and bake at 350°F until golden brown on top, about 30 minutes. Serve either hot or cold.
