Strawberry Meringue

Ingredient

  • 1 can (2/3 cup) evaporated milk 
  • 2 egg whites at room temperature 
  • 1/8 teaspoon salt 
  • 1/3 cup sugar 
  • 3/4 teaspoon vanilla 
  • 1 (10 ounce ) package frozen strawberries (thawed) 
Method 

Freeze milk in large mixer bowl until ice crystals begin to form around edges. In small bowl of mixer beat egg whites and salt until soft peaks form. 
Gradually beat in sugar until stiff peaks form. 
Transfer to a large bowl. In same small mixer bowl, beat chilled milk and vanilla until stiff peaks form. 
Fold with strawberries into egg white mixture. 
Freeze 4 hours or until firm.
