Pineapple Ambrosia

Ingredient

  • 2/3 cup whipping cream 
  • 2 teaspoons lemon juice 
  • 2 tablespoons sugar 
  • 8 large marshmallows, cut in 1/4's 
  • 1 cup drained pineapple chunks 
Method 

Pour cream into a chilled bowl; add lemon juice and beat until stiff. Fold in sugar and marshmallows; chill. Chill pineapple chunks; fold into whipped cream mixture when read to serve. 
Serve immediately. 

NOTE: Any fresh or frozen fruit may be used instead of pineapple. 
If frozen berries are used, keep in refrigerator until almost thawed. When used, they should be slightly icy in center. 

Yield: 4 - 6   servings
