Honey Lemon Snow

Ingredient

  • 2 cups skim milk 
  • 1 envelope unflavored gelatin 
  • 1/3 cup regular or instant enriched farina 
  • 1/3 cup lemon juice 
  • 1 tablespoon lemon rind 
  • 3 egg whites, at room temperature 
  • 1/3 cup honey 
  • 1 lemon, thinly sliced 
  • 1 1/2 cups whole strawberries or green grapes 
Method 

In a medium sized saucepan, combine milk and gelatin; bring to a boil. Slowly sprinkle in farina, stirring constantly. Return to a boil; then lower heat and cook, stirring constantly, until thickened 
(2 to 3 minutes for instant, 8 minutes for regular). 
Remove from heat; stir in lemon juice and rind. 
Cool to room temperature, about 10 to 15 minutes. 
Meanwhile, in a medium sized bowl, beat egg whites until soft peaks form; slowly beat in honey until egg whites form soft peaks. Fold egg whites into farina mixture until combined. Fill the bottom, rounded section of a 4 1/2 cup ring mold with the mixture. Carefully spoon in rest of mixture. 
Refrigerate at least 3 hours, or until serving time. 
Unmold; fill center with berries or grapes.
