Cream Puffs

Ingredient

  • 1/2 cup butter 
  • 1 cup boiling water 
  • 1 1/4 cups flour 
  • 1/4 teaspoon salt 
  • 4 eggs 
Method 

Grease cookie sheet. Place butter and boiling water in saucepan over low heat until butter is melted. Sift flour and salt together. Add all at once to hot mixture. Stir vigorously until mixture leaves side of pan. Remove from heat. Add unbeaten eggs one at a time, beating thoroughly after each addition. Drop batter by spoonfuls on greased cookie sheet about 2 inches apart. Bake at 425°F for 10 minutes. Reduce heat to 350°F and bake for 20 25 minutes or until beads of moisture no longer appear on surface. Cool and slit side of each puff. 
Fill with whipped cream, pudding or fruit pie filling. 
  

Yield: 3 dozen medium puffs.
