Chocolate Steamed Pudding

Ingredient

  • 3/4 cup all purpose flour 
  • 2 1/2 teaspoons baking powder 
  • 1/2 teaspoon salt 
  • 1/2 teaspoon cinnamon 
  • 1/2 teaspoon cloves 
  • 1 1/2 squares unsweetened chocolate 
  • 2 teaspoons butter 
  • 3 eggs, separated 
  • 3/4 cup sugar 
  • 1/2 cup milk 
  • 1 teaspoon vanilla 
  • 1/4 cup slivered, blanched almonds (optional) 
Method

Stir first 5 ingredients together. Melt chocolate and butter; cool. Beat egg yolks until light and foamy; add sugar and continue beating until fluffy. 
Blend in melted chocolate and butter. Add dry ingredients alternately with milk, mixing well after each addition. Stir in vanilla. Beat egg whites until stiff but not dry; fold into batter. Fold in almonds, if used. Turn into a well greased 1 1/2 to 2 quart mold; cover tightly. Steam in a covered steamer for 1 1/2 hours or until done. Serve warm with hot pudding sauce. 

Yield: 12 cupcakes.
