Chocolate Soufflé

Ingredient

  • 1/4 cup butter 
  • 1/3 cup all purpose flour 
  • few grains salt 
  • 1 1/2 cups milk 
  • 2 squares unsweetened chocolate, melted 
  • 4 eggs separated 
  • 3/4 cup sugar 
  • 1 teaspoon vanilla 
Method

Melt butter in medium size saucepan. Stir in flour and blend well. Add salt, milk and melted chocolate; stir constantly over direct heat until sauce boils and thickens. Beat egg yolks with half the sugar. Add a small amount of the hot mixture to the beaten egg yolks and return to rest of mixture in saucepan. Cook 2 minutes longer, stirring constantly. Remove from heat; cool slightly and stir in vanilla. Beat egg whites until stiff but not dry; gradually beat in remaining sugar and beat until thick and glossy. Fold into cooled chocolate mixture. Turn into an ungreased 2 quart soufflé dish or casserole dish. Bake in a slow oven 300°F for 1 hour. Serve immediately with Foamy Sauce or Vanilla Sauce. 

Yield: 6 - 8 servings
