Banana Cupcakes
Ingredient
- 1 cup
mashed ripe bananas ( about 3 medium)
- 1 cup
milk
- 3/4 cup
packed brown sugar
- 1/4 cup
corn syrup
- 3
tablespoons vegetable oil
- 2
teaspoons vanilla
- 2
teaspoons white vinegar or lemon juice
- 1 3/4
cups all purpose flour
- 1/4 cup
unsweetened cocoa powder
- 1
teaspoon baking soda
- 1/2
teaspoon salt
- 1/2 cup
chocolate chips
- 1
teaspoon confectioners sugar (optional)
Method
Preheat
oven to 400°F. Lightly
spray muffin pan with nonstick cooking spray. In bowl, mix together
bananas, milk, brown sugar, corn syrup,
oil, vanilla and vinegar. In
another bowl, mix together flour, cocoa, baking soda and salt;
sprinkle over banana mixture
and stir just until moistened. Spoon into prepared muffing pan.
Sprinkle chocolate chips over
top. Bake for 15 to 20 minutes or until toothpick inserted in
center
comes out clean. Let cool
in pan on rack. Sift confectioners sugar over top
Yield: 12
cupcakes.
Note: Be careful not to
overcook, because the cupcakes will be dry.
